Yes, it's official. We've moved to our new home and Myke and I had been playing house for a few days now :P I haven't taken pictures yet but I will be posting it soon! The few days before Christmas, Myke and I had been busy organizing and shopping for other household stuff. I barely had time to visit the market for items I'd be using for our Noche Buena. I was planning on cooking a few dishes but apparently, hubby is content with just some ham, bread and hot choco for Christmas. But being the "show-off" that I am (he he he), I decided to make dessert.
Prior to Christmas, I've been compiling recipes from Home Cooking Rocks that I wanted to try out (with hubby as my guinea pig). Since I was already pressed for time, I decided to make Mango Royale. Thankfully, the wet market is in walking distance from our place so I was able to buy some ripe mangoes for the pie.
The result? Fantastic! Though I probably had gone overboard with the crust. I added more butter and the crust was a tad bit too firm. But despite that, the huge chunk I shared with my in-laws was a hit. My sister-in-law kept asking me the day after Christmas if there are any more Mango Royale :P I had to tell her that the remaining slice at the fridge has been reserved for Myke who polished it off right off the pan!
We had a nice time with our family. Of course, I asked my mom to cook something - a dish that I haven't eaten for sometime already (this time, it's sinigang) as sort of paglalambing. While at Bulacan, I also got to play around with our doggies especially my lovable Cookie who I bought some treats - his favorite Denstyx. Oh, I miss hugging my Cookie *sniff*
After my dad and brother left, I prepared our dinner - fish in chili garlic sauce. I know Myke is partial to spicy sauces. I thought I've put too much chilis but the sauce was sweet with a hot bite every now and then. I was also proud that I was able to cook brown rice. I've read that cooking brown rice is longer since undercooking them renders them 'makunat'. So I was happy that my rice turned out ok :) That's a big one for someone who hadn't cooked brown rice ever :) Dessert was sliced mangoes that were excess from my Mango Royale.
I still haven't figured out what I'll make for the New Year. And with the holiday being moved to yesterday, people have less time to prepare. Maybe it's time to look up some more recipes to try. Maybe you have suggestions, dear reader? :)
